1/3 cup sugar
2 cups white flour
1 tablespoon baking powder
2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter, softened
2/3 cup milk
1 egg, beaten
1 teaspoon vanilla
1 cup butterscotch chips
1/2 cup cinnamon chips
Preheat oven to 400 degrees. Combine the first five dry ingredients. Using a fork or pastry blender, cut in the softened butter until the mixture resembles coarse crumbles. Set aside.
Combine milk, vanilla and slightly beaten egg. Add liquid mixture to the dry mixture; stir until dry ingredients are moistened. Add butterscotch and cinnamon chips. Mix until chips are evenly throughout mixture.
Drop 3 inch balls of mixture onto baking sheet. Sprinkle with additional sugar, if desired.
Bake at 400 degrees for 15 to 20 minutes. Serve warm.
Fabulous with a dollop of fresh whipped cream and a cup of hot tea.
*Note – The scones pictured were baked for 15 minutes in a convection oven. They would have looked a little prettier had I removed them from the oven a minute or two earlier, but they wouldn’t have tasted any better; they were incredibly delicious!
